Messy beyond belief, but amazingly good, you can either make this recipe in a pan and cut into squares, or plop the batter into cupcake cups and make muffins.
This recipe is super easy and is broken down into three different steps.
Step One: Mix with hands in a bowl:
- 2 1/2 Cups All Purpose Flour
- 1 Cup of Brown Sugar
- 1 Cup of Sugar
- 3/4 Cup of Oil
- 1/2 Teaspoon of Salt
Step Two: Remove 1 Cup of step one, put into another bowl, and add:
- 2 Teaspoons of Cinnamon
- 1 Teaspoon of Baking Powder
- 1 Teaspoon of Baking Soda
- 1 Egg
- 1 Cup of Buttermilk
If making a pan, spread step three on a greased and floured pan, spread step two over the dough and bake at 350 degrees for 30-40 minutes. Some ovens even take 50 minutes. When the cake is done, if you stick a knife in the middle, the knife will come out clean.
If making muffins, scoop the step three into the muffin pan (or cupcake cups). Fill cups only half way full. Any more than half way and you’ll have a mess on your hands as this recipe rises. Spoon step two over the dough and bake for 20-30 minutes, depending on how your oven bakes.
