I have to say that out of all my muffin recipes, this one happens to be the most dangerous for people wanting to stick to a diet. *smirk* Why? Because they are little muffins sent straight from Heaven above.
I started making a bunch of different types of muffins for my daughters for breakfast. However, after discovering this recipe, these are more for desert than breakfast.
Recipe is for 21 Muffins
- 2 Cups of All Purpose Flour
- 2 Teaspoons Baking Soda
- 1/2 Teaspoons of Salt
- 2 Large Eggs
- 3/4 Cup of Peanut Butter
- 1 Cup of Milk
- 1 Cup of packed Brown Sugar
- 2 Tablespoons of Melted Butter
- As much Chocolate Chips as you like!!!
Preheat oven to 375 degrees. Mix Flour, Baking Soda, and salt into a bowl. In a separate bowl, cream peanut butter and brown sugar, then add in the melted butter and eggs. Mix until smooth. Add milk to flour mixture and stir until blended, then add in the smooth mixture from the other bowl and mix until everything is fully blended together. Once blended together add as much chocolate chips as you like. Mix and fill either a greased muffin tin pan or cupcake paper cups in a muffin pan.
Bake at 375 degrees for 18-20 Minutes
